Linda Lee Mendelkow Byington, beloved wife, mother, grandmother, sister and friend, passed away on March 28, 2026, in Logan, Utah, surrounded by those she loved. She was born on May 14, 1943, in Logan, Utah, to Marion and Leanore Mendelkow. After a long and courageous battle with pulmonary fibrosis, she is now at rest.
Linda was raised in a large and lively family with 10 sisters and 5 brothers, where she learned the values of love, resilience, and togetherness that she carried throughout her life.
On July 12, 1961, she married the love of her life, Norman Clain Byington, in Logan, Utah. Their marriage was later solemnized in the Logan, Utah Temple on June 7, 1965. Together, they built a life centered on family, raising five children and supporting them in all their pursuits. Linda often joked that she wasn’t spoiled when she got married—but she certainly was by the end.
Linda worked for Schreiber Foods for 28 years, retiring in 2005. She took pride in her work and the friendships she built along the way.
She and Clain shared a love for travel and adventure, enjoying memorable trips to Alaska, Hawaii, and Jackson Hole. One of their favorite traditions was visiting Jackson Hole to see the Bar J Wranglers. She loved spending her weekends camping with her family, playing games, and sitting around the campfire.
Linda’s greatest joy was her family. She is survived by her children: Sandra (David) Kurek; Sharon (Rob) Kurek; Susan (Paul) Stanley; and Sheldon Byington; her daughter-in-law Debbie Byington; 25 grandchildren, a number that lovingly includes their spouses, because once you are family, you are always family; and 18 great-grandchildren. She is also survived by her siblings: Reed Mendelkow, Peggy Olsen, Marylou Johnson, Geri Hancey, Gordon Mendelkow, Clair Mendelkow, KayLynn Allsop, Lori Cushman, Craig Mendelkow, Lisa Peterson, Shelly Hodson, and Leslie Falslev.
She was preceded in death by her beloved husband, Clain; her son, Scott Byington; her great-grandson, Jacob; her parents; her brother, Robert; her sisters, Carol and Eileen; and several extended family members.
A viewing will be held on Saturday, April 4, 2026, from 9:00 to 11:00 am at White Pine Funeral Home, 753 S 100 E, Logan, Utah. A graveside service will follow at 12:00 noon, at the Providence City Cemetery, 925 River Heights Blvd, River Heights, UT.

Linda will be remembered for her strength, her sense of humor, her deep love for her family, and the way she made everyone feel welcome. Her legacy lives on in the lives of those she touched.
Our family would like to thank our wonderful hospice team, Hollie, Jason, Bethany, Gary, and Melissa, for the loving care they gave to our mother. You have shown unbelievable love and kindness to our family, and for that, we will be forever grateful.
