Our beloved mother, grandmother, sister, and friend, Eunice Pitcher Byington Mendelkow, returned to her Heavenly Father after 101 beautiful years filled with love, faith, and family.

Eunice was born on March 16, 1924, in Smithfield, Utah, to Henry Glenn Pitcher and May Isabelle Smith. She joined her siblings Keith, Harry, Winston, Barbara, and RaNae to complete their loving family. She grew up in Smithfield, attending school not far from home, where the values of hard work and devotion to family were instilled early and guided her throughout her life.

Throughout her years, Eunice faithfully served in many callings for The Church of Jesus Christ of Latter-day Saints, as a Relief Society work director and counselor, Primary and Sunday School teacher, and Young Women’s leader. Her quiet strength and willingness to serve were examples to everyone who knew her.

Eunice married her sweetheart, Norman Lorenzo Byington, on November 16, 1939. Their marriage was later solemnized in the Salt Lake Temple. Together, they welcomed six children: Norman Clain, Allen Eugene, Dale Ray, Janet, Una, and Ilene. After Norman’s passing in 1959, Eunice courageously raised her six children on her own a task she met with grace, resilience, and faith. In a time when opportunities for women were few, she created her own path. She attended beauty school and worked as a beautician for several years before joining the Bluebird Candy Factory, where she dipped chocolates with love and precision until the age of 82.

In 1974, Eunice married Marion Mendelkow, and they shared happy years together until his passing in 1985.

Eunice was an artist at heart. She loved tole painting and created many beautiful works for her family to treasure. She also found joy in sewing, crocheting, and decorating wedding cakes each creation a reflection of her creativity and care. Whether she was laying tile, painting walls, sewing curtains, or making do with what she had, she poured her heart into making a warm, comfortable home for her children. She often went without herself so they could have what they needed.

Her family was her greatest joy. She found happiness in simple visits, laughter, and watching generations of her family grow. She loved each family member deeply and remembered them in her thoughts and prayers always.

Eunice is survived by her sister RaNae Karren, daughters Janet Webb and Una (Craig) Grover, daughters-in-law Linda Byington, Lucy Byington, and Janice Byington, and son-in-law David Bishop. She leaves behind a posterity of 21 grandchildren, 54 great-grandchildren, and 28 great-great-grandchildren, each a testament to her enduring love and legacy.

She was preceded in death by her husbands, Norman Byington and Marion Mendelkow; her sons Norman Clain, Dale Ray, and Allen Eugene; daughter Ilene Bishop; son-in-law Dennis Webb; grandson, Norman Scott; two great-grandsons, Jackson Bishop and Jacob Byington; her parents; and siblings Harry, Keith, Winston, and Barbara.

A viewing will be held on Saturday, November 15, 2025, from 9:30 to 11:00 a.m. at White Pine Funeral Home, 753 S 100 E, Logan, Utah. A graveside service will follow at 12:00 p.m. at the Logan City Cemetery.

The family wishes to express heartfelt gratitude for the loving care and support given to Mom and to us during this tender time.

Eunice’s life was one of quiet strength, unwavering faith, and unconditional love. Her hands shaped not just a home, but a legacy of kindness, resilience, and devotion that will continue to bless generations to come.
